Traditional food is served for meals, such as a "Wet Mumu" (steamed corn, sweet potato, potatoes, greens, with or without chicken or pig), or "Dry Mumu" (as above but without the steam) or Traditional Pizza. Meals are accompanied by noodles or rice. A "mumu" is an earth pit oven. Layers of wood and rocks are formed in the pit. As the wood burns the rocks are heated and fall in to the bottom of the shallow pit. Whilst the wood is burning, the meat and vegetables are placed in freshly-woven leaf parcels or bamboo tubes.
Once all the wood is burnt, the parcels and tubes are placed on the hot rocks. A layer of large leaves, goes on next, and then the earth removed to make the pit is placed on top. Voila! one "dry mumu". To the wet variety, bamboo tubes are pushed through the mound to the rock layer, and water is poured down the tubes, the tubes removed, and the holes blocked. Hey presto! a natural pressure cooker.
